Introduction
I have studied milk oligosaccharides of many mammalian species including monotremes (platypus and echidna), monotremes (kangaroo, wallaby, koala, possum, quoll etc), and eutherians (primates, carnivoras,artiodactyla, cetacea, etc)for more than 30 years. There are homology and heterogeneity of milk oligosaccharide structures among mammalian species with respect of species evolution and their living strategies. I try to know how milk oligosaccharides have evolved during the mammalian evolution.The strains of dairy lactic acid bacteria sometimes produce extracellular polysaccharide, which causes the viscosity of fermented product.In a few case, such polysaccharide has the beneficial functions such as immuno modulation. I have been studing the chamical structures and functions of these polysaccharides.
